Operation:
The juice heater consists of an assembly of tubes; the juice circulates through the tubes, and the vapour outside them. Suitable headers force the juice to pass a certain number of times from bottom to top and from top to bottom of the heater by restricting the juice each time to a few of the tubes.
The objectives of juice heating are elimination of microorganisms by sterilization, completion of chemical reactions with the alkalizing agent, flocculation and removal of gases. Effective gas elimination is obtained by flashing as the juice enters the clarifier. The juice temperature must, therefore, be raised above the boiling point at atmospheric pressure which, at sea level, means a minimum of 103°C (217°F). If flashing does not occur, gas bubbles adhering to the floes decrease the rate of settling.Design Feature:
